That depends on so many variables; how they are stored, cleaned, maintained, what kind of cutting board is used, the quality of the knife ETC. But in general, even if you do everything right, most people bring them in once every year or two.
Can we sharpen Japanese knives?
Yes, we can. They are done in a slightly different fashion than European edges. We take the utmost care in what we do here.
